Tre' Mocktail
- 1 fl. oz. Tre'
- 8 oz. Sparkling Cider
- Fresh pomegranate seeds
- Pour Sparking Cider into a wine glass.
- Top off with Tre'.
- Garnish with the pomegranate seeds -- they float! -- for a beautiful as well as nutritious beverage.
Tre' Gelato
- 1 cup Tre'
- 1 cup water
- 1/4 cup granulated sugar
- 1/2 cup heavy cream or full fat Greek yogurt
- In a saucepan heat Tre' and water to just before boiling. Reduce heat to medium and simmer 15-20 minutes. This will reduce the mixture to 1 cup liquid.
- Freeze the reduced juice in an ice-cube tray. (Individual cubes will freeze faster)
- Put the frozen cubes in a food processor with 1/4 cup sugar and grind briefly.
- Add the cream/yogurt and pulse until the mixture is smooth.
- Transfer the mixture into a small container and freeze again, 20 to 30 minutes, before serving. Pulse the gelato briefly in the food processor if it freezes too much.
Approximately 4 servings as a topping or you can double the recipe for a main dessert.
Tre' Poached Pears (with optional gelato topping)
- 1 cup Tre'
- 4 d'Anjou pears
- 1 1/2 oz. granulated sugar
- 1 1/2 oz. water
- 1/2 cup port wine
- 4 sprigs fresh mint
- Combine the Tre', sugar, water, and port in a small saucepan and bring to a low simmer.
- Peel and core the pears.
- Submerge the pears in the Tre'/Port mixture, cook until tender. (8-10 minutes)
- Remove from heat and let cool in poaching liquid.
- Remove the pears when cool and set aside until room temperature.
- Warm the reserved poaching liquid.
- Cut the pears in half.
- Place the warm liquid onto a plate or dessert bowl and place one pear half in the center.
- If topping with the Tre' gelato, you can scoop the gelato into the center of pear.
- Garnish with fresh mint.
Approximately 4 - 8 servings
